Crust
  • 1 CUP butter, cubed and cold
  • 2 CUPS pastry flour (or all purpose)
  • 1/2 CUP powdered sugar
Lemon curd
  • ~3 lemons, zested and squeezed
  • 4 eggs
  • 2 CUPS caster white sugar
  • 3 TBSP flour
  • 1 TSP baking powder
  • 1/4 TSP salt

  • 1/2 CUP powdered sugar

Crust
  1. Sift flour and powdered sugar into bowl
  1. Toss cubed butter in
  1. Using a pastry cutter or hand mixer, cut butter into flour mixture until it’s a wet sand-like quality
Lemon curd
  1. Zest and juice 3 lemons
  1. Use your hands to rub zest into the 2 CUPS of sugar
  1. Whisk together sugar, lemon juice, eggs
  1. Sift in flour, baking soda and Salt
  1. Whisk + taste to make sure there’s enough lemon
Baking
  1. Set oven to 350F
  1. Press crust mixture into bottom of greased 9x13 pan
  1. Bake crust for 20min
  1. While crust is baking, make lemon curd
  1. Take crust out, and immediately pour on lemon curd (make sure to mix again before pouring in)
  1. Bake for another 20 min, until barely jiggly
  1. Top immediately with sifted powder sugar
