Healthy Peach Ice Cream (Ninja Creami)
Ingredients
- 1 cup heavy whipping cream
- 2 egg yolks
- 1½–2 cups chopped fresh peaches (peeled if desired)
- 1 tbsp honey
- 1 tsp agave syrup (heaping)
- 1 tsp fresh lemon juice
- Small pinch of salt
- 1¼ tsp vanilla extract
Instructions
- Make the Custard Base
- In a small saucepan, heat the heavy cream over medium heat until just steaming (not boiling).
- In a separate bowl, whisk the egg yolks.
- Slowly pour a small amount of the warm cream into the yolks while whisking constantly to temper them.
- Return the yolk-cream mixture to the saucepan and continue to heat gently, stirring constantly, until it reaches 170°F and thickens slightly.
- Remove from heat and let cool slightly.
- Prepare the Peach Mixture
- In a bowl, combine the chopped peaches, honey, agave, lemon juice, and a small pinch of salt.
- Let the mixture sit for 10–15 minutes to macerate and draw out the juices.
- Combine and Blend
- Add the slightly cooled custard base to the peach mixture.
- Use an immersion blender (or regular blender) to blend until smooth.
- Stir in the vanilla extract.
- Freeze
- Pour the mixture into a Ninja Creami pint container and freeze for at least 24 hours.
- Churn
- After freezing, run the Ninja Creami on the “Lite Ice Cream” or “Creamy” setting.
- Re-spin if needed for a smoother consistency
