Apples
  1. Prepare a springform pan by greasing with butter or oil + adding a base layer of parchment paper
  1. Peel one apple and slice small lengthwise slivers. Add in pretty circular pattern to bottom of baking dish (springform pan is optimal)
  1. Peel and dice ~3 medium-large apples
  1. Add apples, 2TBSP of sugar and a squeeze of lemon juice to pan
  1. Caramelize for 10-15 minutes, until soft and has a caramelized smell
  1. Add apples to blender. Blend till smooth and then leave to cool
Caramel [Skip this step if you’re making this dairy free]
  1. Add 1/2 cup sugar to pan, and stir on medium until a dark amber color
  1. Add 1/4 cup butter and 1/4 cup cream
  1. Whisk aggressively
  1. Add 1/2 TSP of salt
  1. Pour caramel over apples in prepared pan (try to get an even layer, but no pressure)
Cake batter
  1. Blend cooled apples as much as possible
  1. Add 8 eggs, 275g sugar, a squeeze of lemon juice and blend
  1. Add 325g almond flour and blend again
Compile and bake
  1. Preheat oven to 350F
  1. Pour batter over apples and caramel
  1. Sprinkle slivered almonds
  1. Bake for ~30-45 minutes (poke a stick in to see if it comes out clean at 30min)
Serving
  1. Serve with a sprinkle of icing sugar over top and some tea πŸ™‚
